New England Lobster Rolls
Ingredients
- 1 lb. chunk lobster meat
- 1/3 cup mayonnaise
- 1 tbsp. lemon juice
- 1 stalk celery finely chopped
- 2 tsp. parsley chopped
- 1 tbsp. scallions chopped
- salt and pepper to taste
- 2 tbsp. salted butter melted
Instructions
- In a large bowl, combine all ingredients except lobster meat and butter and stir to combine.
- Add lobster meat and stir.
- Brush a few split-top hot dog rolls with the melted butter and toast.
- Scoop lobster filling into the toasted rolls and serve.
