Do I Need to Use Fresh Garlic?

When preparing the marinade for your chicken, the recipe calls for two tablespoons of minced garlic. While it is always ideal to use fresh garlic, it is perfectly fine to use minced garlic from a jar. If you do not feel like dealing with peeling and cutting garlic cloves while getting your hands messy, using pre-minced garlic is a great solution. It will still give your marinade the flavor that it needs to make the chicken taste undeniably good.

What Type of Onion Should I Use?

While it does not matter which type of onion you decide to use when preparing the Oven Baked Chicken and Vegetables recipe, yellow onions are a great choice. They will become translucent as they start to cook, blending in perfectly with the chicken and vegetables. You can use Spanish onions if you do not have yellow onions available.

Can I Make the Chicken and Vegetables in the Air Fryer?

If you do not like using the oven or do not have access to one, you can prepare the Oven Baked Chicken and Vegetables in the air fryer. However, you may need to make a few adjustments based on the size of your air fryer. You can chop it into small chunks of chicken before or after you let it marinate in the mixture of olive oil, lemon juice, and various seasonings. Ingredients
  

Chicken:

  • 3 – 3 1/2 pounds whole chicken giblets and neck removed
  • 2 tablespoons butter melted
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon coarse ground pepper
  • 1/2 teaspoon sage
  • 1/2 teaspoon dried thyme or fresh
  • 1 lemon quartered
  • 1/2 onion cut into large chunks
  • 3 fresh rosemary sprigs
  • 4 cloves garlic

Vegetables:

  • 1 tablespoon olive oil
  • 1 pound small potatoes halved or quartered
  • 3 large carrots quartered
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

Chicken:

  • Heat the oven to 425° and spray a dutch oven or other oven safe pan. Rinse the chicken and pat dry.
  • Combine the melted butter, garlic, salt, pepper, sage, and thyme together and rub over the chicken.
  • Fill the cavity with lemon pieces, onion, rosemary sprigs and garlic cloves.
  • Place the chicken in the bottom of a dutch oven pan.

Vegetables:

  • Combine the potatoes and carrots and toss with the olive oil, salt and pepper, then place around the chicken.
  • Place in the oven. Bake until a thermometer inserted reads 165°.
  • Remove and serve.
