Patriotic Ice Cream Sandwich Cake
Ingredients
- 18-20 vanilla ice cream sandwiches
- 2 tubs frozen whipped topping, thawed at room temperature
- 8 oz block of cream cheese softened
- 1 cup powdered sugar
- 1 cup white cake mix
- 2 teaspoons vanilla extract
- 2 cups thin Oreo crumbs divided
- Red gel food coloring
- Blue gel food coloring
- 4 th of July sprinkle blend about ½ cup
Instructions
- In the bottom of a 9×13 baking dish, lay ice cream sandwiches flat and flush against one another covering the entire bottom to create layer 1 of two.You may have to cut an ice cream sandwich in half for them to cover the bottom of the dish evenly. Place in the fridge until step 6.
- In a large mixing bowl, combine whipping toppings, cream cheese powdered sugar, and cake mix using an electric hand mixer. Mix until smooth.
- Fold in vanilla and 1-½ cups of Oreo crumbs. Mix well again.
- Divide the mixture into two bowls. Working one at a time, add a different color food coloring to the bowls starting with 3-4 inches at a time to create one red mixture and one blue mixture. Blend using a hand mixer until the color is fully worked in. Add more food coloring if needed to reach the desired color.
- Spread the red layer over the first ice cream sandwich layer evenly using a rubber spatula.
- Top the layer with the second layer of ice cream sandwiches, repeating step 1.
- Top with the blue mixture spreading evenly over top.
- Top with remaining crushed Oreos and then the sprinkle mix covering the majority of the surface (make your cake full but leave enough space to see the blue layer).
