Pizza Zucchini Pasta (Low Carb)

Pizza Zucchini Pasta is insanely delicious and low carb! 

If you are a pasta lover like I am and are looking for a low-carb version that’s closer to the real thing than spaghetti squash, you have found it today! This recipe is simple and incredible!

This recipe gets five stars in my book because I can have one of my all time favorite foods- without all the guilt of the carbs involved!

Zucchini doesn’t have a whole lot of flavor on its own, so adding the right amounts of seasonings really makes these zoodles taste like actual pasta!

I use a bit of beef broth and some butter with garlic and olive oil to get a nice saute going, it really contributes to the sensational flavor and the zoodles really soak it up nicely.  

Remember, Zucchini does cook quickly, so be careful not to overcook it!

I like to make my own homemade easy sauce just using 1 can crushed tomatoes, 1/4 cup olive oil, 6 cloves minced garlic (I adore garlic), 1/4 tsp onion powder and some fresh parsley. The top it off with some freshly grated parmesan cheese!

I had just purchased a julienne cutter (get one here) and I used that, and it was perfect for making these noodles & it was fun to do! I will definitely be making these again, and trying all different sauces with them (Alfredo, marinara, meat sauce) YUM!

You can add some of your favorite proteins to this dish in place of the pepperoni if you’d like!
Grilled chicken, ground beef or even sausage would be a delicious addition!

Pizza Zucchini Pasta

Ingredients
  

  • 1 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1 tsp beef broth
  • 3 cloves garlic
  • 4 large zucchini spiralized and sweated
  • 2 cups low-fat pepperoni slices optional you can use grilled chicken, ground beef or sausage instead
  • 1 tsp. ground black pepper
  • fresh parsley chopped
  • Parmesan cheese grated

Easy Sauce

  • 2 Tbsp. olive oil
  • 3 cloves garlic
  • 1 medium can crushed tomatoes
  • 1/4 tsp onion powder
  • 1/2 tsp fresh parsley
  • 1/4 cup freshly grated parmesan cheese!
  • salt & pepper to taste

Instructions

Directions for Zoodles:

  • 1. Melt butter, olive oil and garlic in a large skillet over medium-high, add in the zucchini noodles with the broth and toss for 2-3 minutes, set aside.

Directions for Sauce:

  • In a large sauce pot, heat the oil and garlic with seasonings (except cheese) for about 1 minute , stirring constantly- be sure not to overcook the garlic.
  • Add in the crushed tomatoes and mix well , lower heat and allow to cook at least 10 minutes, stirring frequently.
  • Once cooked, add in the parmesan cheese, mix, THEN pour in the noodles.
  • Add in pepperoni and continue to cook until sauce becomes slightly thickened.
  • Garnish noodles with more parmesan. Serve immediately.
  • ENJOY!
