Pumpkin Oatmeal Chocolate Chip Cookies are crazy delicious and homemade from scratch! They are soft and chewy!

This is such an easy and delicious cookie recipe!! I love to bake so much when fall baking time rolls around!  Its just around the corner and I cannot wait! Simple ingredients and minimal effort create one of the most delicious cookie recipes you’ll try!

These cookies make the entire house smell like a fall wonderland, its just wonderful while they’re baking, everyone was standing around just waiting for them to come out of the oven! They make for an easy and incredible dessert that everyone will be raving over!

BAKER NOTE:

Do not store these cookies in an airtight container though – they have a lot of moisture from the pumpkin and will get moist and mushy. They stay great out on the counter for days though! Delicious with a hot cup of morning coffee!

Pumpkin Oatmeal Chocolate Chip Cookies

Ingredients
  

  • 1/2 cups light brown sugar packed
  • 3/4 cup 1 1/2 sticks salted butter, softened
  • 1 cup canned pumpkin puree
  • 1 1/2 tsp. pure vanilla extract
  • 2 large eggs
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 2 cups quick-cooking oats
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 1/2 cups chocolate morsels

Instructions

  • Preheat oven to 350F and line a cookie sheet with parchment paper.
  • In the bowl of a stand mixer, beat together butter and brown sugar until light and fluffy.
  • Add eggs one at a time, mixing after each addition.
  • Pour in pumpkin puree and vanilla and mix to combine.
  • In a medium bowl, combine cinnamon, cloves, nutmeg, oats, flour, baking powder, and salt and whisk.
  • Gradually pour dry mixture into the stand mixture until a soft dough forms.
  • Fold in chocolate morsels and scoop cookie dough onto the prepared cookie sheet, leaving room for the cookies to spread.
  • Bake for 12 minutes, or until golden brown.
  • Transfer to a wire cooling rack and let cool before serving.?

    This is our go to recipe! I sub flour with Bob’s Red Mill gluten free baking flour and the butter with Country Crock plant butter. Perfection!!
