Red Velvet Dessert Cups with Homemade Whipped Cream!

I feel like I should have posted these a LONG time ago.. I have had them ready to go for about a month now and I am just now getting to them!

Red Velvet Dessert Cups with Homemade Whipped Cream!

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1 teaspoon cocoa powder
  • 2 large eggs
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract

WHIPPED CREAM INGREDIENTS

  • 3 cups heavy cream
  • 1 ½ cups sugar
  • 1 ½ tablespoons vanilla extract

Instructions

  • Preheat the oven to 350-degrees F.
  • Grease an 11 x 13 baking pan and set aside.
  • In a large bowl, sift together the dry ingredients. Set aside.
  • In the bowl of an electric mixer, beat the eggs. Add in the remaining wet ingredients and mix to combine.
  • Add the dry ingredients and mix until just combined. Do not overmix.
  • Pour the batter into the prepared pan and bake about 30 minutes until a toothpick inserted in the center comes out clean.
  • Let rest until cool. Cut the cooled cake into small cubes.
  • In pretty glasses, assemble the dessert cups as follows:
  • Spoon in whipped cream at the bottom, top with a layer of the cake cubes. Finish with another dollop of whipped cream, and a bit of cake crumbs.
  • Alternatively, you can also assemble this in a large trifle bowl instead of individual cups if desired. This will make about 10-15 dessert cups depending on the size of the glasses.
  • Store dessert cups in the refrigerator until ready to serve.

WHIPPED CREAM DIRECTIONS

  • In an electric mixer on low, combine the cream, sugar and vanilla.
  • Once combined, increase the speed of the mixer and beat until stiff peaks form.
  • Refrigerate leftover whipped cream (if any).
  • ENJOY!
