- 2 1/2 c crushed vanilla wafers
- 1 c ground pecans
- 2/3 c powdered sugar
- 1/4 c ground walnuts
- 3 Tbs cocoa
- 1/3 c spiced rum
- 2 Tbs honey
- 1 Tbs salted butter room temp
- 1 1/2 tsp vanilla
- Cocoa powdered sugar or finely chopped pecans for rolling
Instructions
- In a large mixing bowl combine crushed wafers, pecans, powdered sugar, walnuts and cocoa. Set aside. In a separate medium sized mixing bowl whisk together rum, honey, salted butter and vanilla. Once well combined, add to the dry mixture. Use a fork to combine the mixture very well, until the dry ingredients are fully saturated.
- Use a melon baller or a small cookie scoop to scoop out 1 Tbsp. sized balls, until all of the mixture has been used. Roll each dough ball in between your hands to make them smooth.
