What is penuche fudge?

Penuche fudge is a type of fudge that has a creamy, sticky texture. It gets its name from the penuche or pinochet sauce that is typically used in its preparation. Penuche sauce contains brown sugar and milk or cream, among other ingredients.

Ingredients Needed

  • Brown Sugar – Penuche fudge gets its distinctive taste from brown sugar, which adds a rich flavor and dark color to the finished treat.
  • Salted Butter – Unsalted butter may be used instead. If used, add a slightly heaped 1/4 tsp of salt to the recipe.
  • Evaporated milk –  Evaporated milk helps to create a smooth and creamy texture in this fudge. Some recipes may substitute regular milk.
  • White Chocolate Chips – White chocolate chips can be used instead of semisweet or milk chocolate.
  • Vanilla Extract – A few drops of vanilla extract add flavor and depth to this fudge recipe.

Tips for Making Easy Penuche Fudge Recipe

  • It is recommended to use a high-quality white chocolate chip, such as Ghirardelli or Nestle for this recipe. The high-quality chocolate will melt more smoothly giving the fudge that creamy texture.
  • Go low and slow with this fudge. Cooking this on a higher heat in order to reach the correct temperature faster is not recommended. Rushing the simmering step will not allow the brown sugar to dissolve properly, making the fudge grainy and crumbly once it sets.
  • Use a candy thermometer for this recipe. It is very important that you reach the correct temperature without going over.
  • Go ahead and sprinkle the finished fudge bars with brown sugar. The more brown sugar, the better!

How to Store Penuche Recipe

Ingredients
  

  • 2 2/3 cups Brown sugar
  • 2/3 cup Salted butter room temp
  • 2/3 cup Evaporated milk
  • 1 cup White chocolate chips
  • 1 cup Marshmallow fluff
  • 1 1/2 tsp Vanilla
  • 1 tsp Salt

Instructions

  • Line a 9×9” baking dish with parchment paper and set aside.
  • Combine brown sugar, butter and evaporated milk in a medium sized saucepan.
  • Bring to a boil over medium-high heat, then reduce to a simmer until the temperature reaches 236°, about 20 minutes.
  • Once the temperature is reached, add in the white chocolate chips and mix until melted and smooth.
  • Once the white chocolate is melted, add in the marshmallow fluff and mix to combine. Add in vanilla and salt and mix to incorporate.
  • Transfer the fudge into the prepared baking dish. Let sit for 4 hours, until set. Once set, slice and serve.
