Peppermint Fudge
Ingredients
- 8 oz evaporated milk
- 2/3 c sugar
- 1 Tbs salted butter room temp
- 2 1/2 c white chocolate chips
- 7 c mini marshmallows
- 2 tsp peppermint extract
- 1 c crushed candy canes
Instructions
- 1 – Line a 9×9 baking dish with parchment paper and set aside. Combine evaporated milk, sugar and butter in a medium sized saucepan. Cook over medium-high heat until it starts to simmer. Let the mixture simmer for 5 minutes, stirring constantly. Remove from the heat and add in the white chocolate chips. Mix until melted and well combined. The white chocolate chips may not melt completely, just because the pan is off of the heat. Add in marshmallows and mix, then return the saucepan to medium-low heat.
- 2 – Stir the mixture in the saucepan until the marshmallows have completely melted. Add in peppermint extract and mix to combine. Add in half of the crushed candy canes and mix until incorporated. The mixture should be really thick at this point. Make sure all of the ingredients are mixed very well, then pour the mixture into the prepared baking dish and smooth out. Sprinkle the remaining crushed candy canes on top. Let the fudge set and cool down for about 4 hours, until firm. Once firm, remove from the pan and cut into 1" squares and serve.
