Pineapple Loaf Cake with Pineapple Glaze
Ingredients
Difficulty: Easy
Prep time: 15 minutes
Bake time: 1 ½ hours
Servings: 10 slices
Bread:
- 1 c sugar
- ½ c butter room temperature
- 2 Tbs shortening
- 2 eggs + 1 yolk
- 1/3 c pineapple juice
- 1 tsp vanilla
- 1 tsp pineapple flavor
- 1 3/4 c flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 can crushed pineapple
- 1 c chopped pineapple
Glaze:
- 1 c powdered sugar
- ½ tsp vanilla
- 1/2 tsp pineapple juice
- 1-2 Tbs milk
Instructions
- Preheat the oven to 350F & Line a loaf pan with parchment paper for easy removal later on.
- Spray the pan with baking spray and set aside.
To make the bread batter
- start by adding the sugar, butter and shortening to the bowl of a stand mixer fitted with a paddle attachment.
- Beat together on high speed for 2 minutes or until fluffy and lighter in color.
- Next, add in the eggs and beat together for 30 seconds.
- Add in the pineapple juice, vanilla and pineapple flavor.
- Mix together until combined.
- Add in the flour, baking powder, baking soda and salt and mix just until combined.
- Fold in the crushed pineapple with the juice and the chopped pineapple.
The batter will be somewhat runny at this point.
- Pour the batter into the prepared loaf pan.
- Place the pan into the oven to bake for 1 ½ hours or until a toothpick inserted comes out clean or with slightly moist crumbs.
- Once baked, remove from the oven and place on a cooling rack to cool for at least 20 minutes.
To make the glaze
- whisk the ingredients together in a medium sized bowl until smooth.
- Pour the glaze onto the loaf and let cool completely before slicing and serving.
