When I first made this for my girlfriends during our weekly lunch hour, they raved over it!
They went CRAZY for it, it was a huge hit! comments like, “Better than any carrot cake ive ever tried!” and even “Better than my Grandmas!” which, no matter what kind of cook Grandma was, is a huge compliment!
Its always fluffy and ultra moist- perfect with morning coffee or after dinner for dessert!

Southern Hummingbird Bundt Cake!
Ingredients
Makes 12 servings.
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups sugar
- 1 teaspoon cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla
- 8 ounce can crushed pineapple with liquid
- 1 cup pecans chopped
- 2 bananas chopped
Instructions
- Preheat oven to 350F
- Mix the dry ingredients in a large mixing bowl & add in the wet ingredients and stir until well combined. Mix in bananas and pecans.
- Spray a bundt pan with non-stick cooking spray.
- Pour batter into the pan and bake for 60-65 minutes or until a toothpick inserted into the cake comes out clean.
