Every year, you have to make at least one strawberry dessert. This dessert should be the one you choose. You’ll love the way these Strawberry Lemon Bars turn out. 

If you prefer your desserts moist and soft, then this recipe is for you. You’ll get that juicy and tart flavor that you’re looking for in a fruit-based dessert.

Curiosity will get the best of you with this dessert. If you’re curious about what’s in it, you’re in luck. The list of ingredients isn’t crazy! You can grab these ingredients from the store and start making the dessert in no time. 

  • Box of strawberry cake mix (I used Betty Crocker) – You can use whatever kind of strawberry cake mix you have in the pantry. 
  • Fresh strawberries (chopped) – Fresh is always best, but if all you have on hand is frozen, you can use those. 
  • Lemon juice – If lemon juice is all you have, use it. Don’t be afraid to use freshly squeezed lemon juice.
  • Large eggs – You’ll need the large eggs in this recipe to help make sure the brownies bake properly. 

Making the glaze is also super easy. For the glaze, you will need powdered sugar and lemon juice. You will mix the powdered sugar and lemon juice. The glaze will eventually be poured on top of the brownies. If the glaze is too thick, just add a little extra water or lemon juice to it.

How to Make Strawberry Lemon Brownies 

Preheat the oven. 

Line a baking dish with parchment paper and then spray it.

Mix all of the ingredients in a bowl.

Pour the batter into the baking dish and bake.

Ingredients
  

  • 1 15.25 oz box of strawberry cake mix I used Betty Crocker
  • 1/2 cup fresh strawberries chopped
  • 1/3 cup lemon juice
  • 2 large eggs

Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon lemon juice add a few extra drops if needed for desired consistency

Instructions

  • Preheat the oven to 350 degrees.
  • Line an 8” square baking dish with parchment paper and spray with cooking spray.
  • In a large mixing bowl, combine the cake mix, strawberries, lemon juice, and eggs with a hand mixer or fork until smooth.
  • Pour batter into the baking dish and bake for 18-20 minutes or until set (to test, insert a toothpick into the middle of the brownies until it comes out clean).
  • Let brownies cool for 10 minutes before removing the parchment paper from the pan.
  • Make the glaze by combining the powdered sugar and lemon juice until smooth.
  • Pour glaze over brownies and over the edges. Let cool completely on a cooling rack and cut into squares.
