Sun-Dried Tomato Garlic Shrimp Pasta
Ingredients
- 1 pound linguine
- 1 pound peeled and deveined large shrimp
- 1 cup Parmesan cheese
- 1 cup pasta water reserved
- 4 tablespoons butter
- 1 teaspoon olive oil
- 3 cloves of garlic minced
- 1 cup sun-dried tomatoes in olive oil
- 1 8 oz. jar pesto
Instructions
- Cook pasta according to packaged directions for al dente.
- Remove 1 cup of the pasta water for later.
- Add the butter to the pasta and toss well
- Finely chop the sun-dried tomatoes.
- In a skillet on medium high heat add the pesto, garlic, oil and chopped sun-dried tomatoes and heat for 2 minutes stirring often.
- Add shrimp and cook for two to three minutes. Stir in the cheese and mix thoroughly.
- Toss in the pasta to coat. Use the remaining pasta water to thin the sauce to the desired consistency.
- ENJOY!
