Apple Pie Egg Rolls
Ingredients
- 15 egg roll wrappers
- 4 C apples peeled, cored and diced
- 1/3 C brown sugar
- 2 Tbs salted butter diced
- 1 Tbs sugar
- 2 tsp cinnamon
- 1 tsp lemon juice
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/4 tsp cloves
- 2 Tbs cornstarch
Cinnamon sugar
- 1 c sugar
- 3 Tbs cinnamon
- Oil for frying
Instructions
- In a medium saucepan combine apples, brown sugar, butter, sugar, cinnamon, lemon juice, nutmeg, salt and cloves. Stir constantly and cook on a simmer over medium heat for 8 minutes. Remove from the heat and mix in the cornstarch.
- Place the wrappers on a clean surface with one corner facing you. Place 2-3 Tbsp of apple mixture onto the lower middle of the wrapper. Fold the bottom corner up and over the filling, then fold in the two outward corners towards the center like an envelope. Lightly brush the remaining corner with water, then roll it up to seal. Repeat with the remaining wrappers.
- Preheat 3” of oil in a large stockpot to 350°. Once the oil is heated, place 3-4 rolls into the oil. Fry for 2 minutes, then flip and fry for an additional 2 minutes. Once cooked, carefully remove from the oil and place onto a paper towel lined plate. Repeat the frying process with the remaining eggrolls.
- In a small bowl combine sugar and cinnamon. Set aside. Once all the egg rolls have been fried and while they are still warm, roll them in the cinnamon sugar mixture.
