Biscoff Truffles are a decadent dessert that is made with just four ingredients. Biscoff cookie butter, cream cheese, almond bark, and Biscoff cookie crumbs. A simple no-bake dessert that is a bite-size treat.

What Are Biscoff Truffles

Biscoff truffles use Biscoff cookies, cookie butter, cream cheese and white chocolate to create a bite-size white chocolate-coated truffle. These take minimal effort to make and are bursting with sweet and warm spices in each bite.

Ingredients Needed

Biscoff Cookie Butter – Cookie butter is the lead flavor in these truffles. The cookie butter is ultra creamy and bursting with rich flavor.

Cream Cheese – Softened cream cheese is a must so it incorporates into a creamy texture for these truffles.

Biscoff Cookies – You will also crush up the cookies and use them to work in the truffles. It adds texture and adds a nice crunch flavor.

Almond Bark – Almond bark is a great coating that hardens nicely on the balls. That way the chocolate doesn’t melt in your hands.

Variations And Swaps

  • Mix in white chocolate chips, semi-sweet chocolate chips, or even milk chocolate chips.
  • Use dark chocolate or milk chocolate in replace of white chocolate.
  • Add in chopped dried fruit like blueberries, cranberries, or even dried cherries.
  • Do half cookie butter and half peanut butter for a mix of flavors.
  • Add in 1 teaspoon of instant coffee granules for a coffee flavor boost.
  • Use graham cracker crumbs instead of Biscoff cookie crumbs.
  • Do half cookie butter and half Nutella for the filling.
  • Drizzle the top of each truffle with a little sea salt for added flavor to the balls.

I always want to remind you that the quality of the ingredients will always affect the flavor of the truffles.

Cream Cheese Needs to Be Softened

Leave your cream cheese out for 30 minutes to an hour to allow the cream cheese to become softer. This is a must or you will not get a proper creamy texture.

Crush Cookie Crumbs

If you do not own a food processor, you can use a rolling pin and a Ziplock bag. You just want to crush the cookies like a sand-like texture.

Cookie Scoop

Use a cookie scoop to ensure you get an even-shaped truffle. This is going to make sure that all your cookie truffles are set into an even shape.

Dip Each Ball

When you are dipping your balls in the chocolate you will work quickly and top each truffle right after you place on the tray. The white chocolate will dry really fast.

Chill Before Serving

Allow the chocolate to set up and then refrigerate the truffles to allow them to chill and set up. I recommend letting them set up for at least 30 minutes to an hour.

Stacking Truffles

When you go to stack the truffles I recommend using a layer of wax paper between each layer. This will help to prevent the truffles from sticking together.

Storing

You will want to refrigerate the cookie Biscoff truffles in an airtight container for up to 5-7 days. These truffles store pretty well in the fridge.

Or if you want, go right ahead and freeze the truffles for 3-4 months. Just thaw in the fridge overnight, or let the truffle thaw for 30 minutes to an hour for a quick thaw.

FAQs

Where can I find Biscoff cookie butter?

You can find the cookie butter at the grocery store or shop online. You will want to go where your nut butter and spreads are in the store. I find them next to the peanut butter and jelly’s at the store.

How do I prevent the truffle mixture from sticking to my hands when rolling into balls?

You can lightly grease your hands with some cooking spray. This is going to ensure that the mixture doesn’t stick to your hands. Make sure to use a flavorless oil, so it doesn’t alter the flavors of the cookie butter Biscoff truffles.

Can I make these truffles in advance for a special occasion?

Go right ahead and make them 1-2 days in advance. Just whip them up and then store in a sealed container in the fridge. Then when ready place on a platter and serve.

Are Biscoff cookie butter truffles gluten-free?

You will find that Biscoff cookies are not gluten-free. So if you are going to want a gluten-free truffle you need to reach for a gluten-free cookie and cookie butter.

Biscoff Truffles are a no bake treat that uses just four ingredients. These cookie butter truffles are made with crushed Biscoff cookies, cookie butter, cream cheese and white chocolate.

Ingredients
  

Biscoff filling

  • 1 cup Biscoff cookie butter
  • 1/3 cup cream cheese softened
  • 1 cup Biscoff cookie crumbs

Biscoff coating

  • 12 ounces almond bark or white chocolate candy melts
  • 1/4 cup biscoff cookie butter

Instructions

Filling

  • Pulse the Biscoff cookies in a food processor until they become fine crumbs.
  • Prepare a large baking sheet with parchment paper. Set aside.
  • In a large mixing bowl with a hand mixer, beat the cream cheese and cookie butter until smooth and creamy.
  • Fold in the cookie crumbs until completely combined.
  • Use a small cookie scoop to create even dough balls and place on the parchment lined
  • baking sheet. Roll each ball between your hands to create a smooth dough ball.
  • Place in the freezer to harden for 15-30 minutes.

Coating

  • Place the white chocolate in a bowl and heat, stirring every 30 seconds until melted.
  • Add the biscoff butter and stir until combined.
  • Dip each biscoff ball into the white chocolate mixture and tap off any excess.
  • Place back onto the parchment paper lined baking sheet.
  • If desired, garnish with drizzle and extra Biscoff crumbs. Place back into the freezer for a few minutes to allow the white chocolate to set.
