Ingredients
Here is a quick look at what you will need to make this Crock Pot Mississippi pork chops dinner idea. Full measurements are in the printable recipe card at the bottom of the post.
Pork Chops – You will want to reach for boneless pork chops for this recipe. You can use bone-in just adjust the cooking time as bone-in meat takes longer to cook.
Seasonings – A packet of dry ranch seasoning and au jus seasoning are the two mixes that work together to create a tangy, savory, and flavorful base for the pork chops.
Pepperoncini Peppers – You will use the peppers and the juice for this recipe. The juice is optional but it adds so much flavor to the pork.
Butter – Use real butter for this recipe that you slice into smaller squares and place on top of the pork chops. As the butter melts it truly flavors the pork but also helps tenderize the chops.
Variations to Crock Pot Mississippi Pork Chops

Vegetables – If you want more to the dish consider adding in other ingredients like diced potatoes, carrots, and other vegetables of choice. Just cook along with the pork for a full meal in one.

Serving Suggestions
Serve your pork chops over a bed of mashed potatoes, noodles, or even rice. Or if you want to lower the carbs reach for cauliflower rice.
I also love using steamed or roasted vegetables as a side dish to pair with these easy slow cooker chops. Feel free to play around with sides to create a dinner that you and your family enjoy. I also love pairing it with bread or dinner rolls to slather up the excess sauce on the plate.
Pro Tips for Success
- Searing the pork before you add it to the slow cooker adds a bit more flavor to the pork but also creates a crust to the pork that elevates the texture.
- Use less or more pepperoncini peppers to control the heat factor. Less will make the dish mild, and more will spice it up.
- Low and slow on the cooking is key. I find that cooking your pork chops on low helps provide a tender and juicy chop. If you cook on high it can leave your pork chop a bit tough.
- Try not to open the slow cooker, as opening allows heat to release and will cause it to take longer for the pork to cook fully.
- Use a meat thermometer to ensure the pork chops reach the proper internal temperature before serving.
- Remove the pork from the slow cooker and cover with foil on a plate. Let the pork rest for at least 5 minutes before serving. This ensures the juices lock into the pork.
Storing Leftovers
If you do not eat all the leftover pork chops simply store them in an airtight container in the fridge. The pork chops will last 2-4 days. Then you can warm up in the microwave, oven, or even stovetop.
Feel free to freeze any pork chops you do not eat right away. Place in a freezer container and freeze for 2-3 months. Then defrost straight from the freezer. Or thaw in the fridge for 24 hours before you warm it up.

Wendy says
I do not like pork, but my mother had LOTS of pork chops in her freezer that she bought on special. This was our first recipe with some of them. Good job! I overcooked them a little, but the flavor was terrific and the gravy was very tasty on rice and served with a sweet potato. I can guess that taking leftovers to use for pulled pork sandwiches would be awesome.
