Chicken broth is a must compared to water. The broth is going to add tons of flavor to the soup. Now, you could use water and a better bouillon if that is what you have on hand.
If you find the soup is lacking in flavor season with salt and pepper. Or you can add fresh or dried herbs to add even more flavor. Parsley, bay leaf, or even thyme or rosemary can be added.
