Looking for the perfect quick and easy side dish? This souper rice is a 5-ingredient rice that is creamy, cheesy, and bursting with flavor. Minute rice, cream soup, chicken broth, parmesan cheese, and black pepper are all you need. It only takes around 10 minutes from start to finish.

This souper rice recipe was an instant favorite in our home. Pair with your favorite chicken, pork chops, or even meatloaf. No matter what the main dish is, this rice recipe will try and steal the show!

What is Souper Rice?

Souper rice is what I like to call a fast-paced world side dish. When you want something quick, but delicious. This rice is made with Minute rice, condensed soup, parmesan cheese, and more. It creates this ultra-creamy rice that is loaded with savory flavors in each bite.

A total comfort food side dish that is made in a flash. Great for those who are learning to cook, college students on the go, or a busy parent who needs quick and easy.

Reasons To Try This Minute Rice Recipe

  • No Fail Rice! If you struggle to make rice, minute rice will be right up your alley. Perfection every single time.
  • Budget Friendly. Need a side dish that is affordable and has minimal ingredients? If you answered yes, then this might be a perfect fit.
  • Cheesy. Who doesn’t love a cheesy rice? I know even picky eaters gobble up this rice. The parmesan cheese throws this rice into a whole new level of comfort flavors.
  • Quick. We all are rushing from morning to night. With this recipe, you can throw it together even on the busiest of evenings. It is a breeze to make.

Ingredients and Substitutes

Minute Rice – You need to use minute rice for this recipe. I have found other types of rice end up having a bit different texture and result. Reach for the white rice.

Cream Soup – Condensed cream of chicken soup is my go-to. Now you could do a celery, broccoli, or even cheese soup if you want to play around with the flavors.

Chicken Broth – Broth or stock both work for this recipe. If you want a vegetarian recipe use a non-meat condensed soup and then opt for vegetable broth instead. Or to elevate flavor and nutrients try chicken bone broth.

Parmesan – Fresh or store-bought works. I like to use actual grated cheese and now the powdered stuff. I find the grated parmesan allows for that creamy texture you want. You can buy it pre-shredded.

Pepper – The secret is the pepper. There is something about the black pepper that takes this rice from good to great. Fresh ground is even better if you have that on hand.

More Variations

  • Change up the type of cheese – pepper jack, sharp, Monterey jack, etc.
  • Splash of hot sauce to heat things. Red pepper flakes would also be a great option for spice.
  • Stir in some fresh parsley at the end of cooking or other herbs.
  • Toss in some rotisserie chicken to make it a meal in one, or even diced-up pork chops. Just make sure the meat is fully cooked.

What To Serve With Souper Rice

This is honestly such a great side dish as it will pair with essentially anything. I have even made my homemade Italian meatballs and it was a fantastic compliment. Or try my oven-baked chicken and veggies for a comforting main dish.

Another one is this prime rib, it is phenomenal and the cheesy rice is a hit every single time.

Storing Leftovers

Refrigerate any of the rice you do not eat right away. Store in a sealed container in the fridge for 3-4 days. You will find the rice can thicken and dry up a bit, as it is best served warm.

Reheat in the microwave, or a skillet on the stove. Just heat until warmed through then enjoy. If you warm it up in a skillet you can add a teaspoon of liquid to help it thin up just a bit.

Helpful Tips

Minute Rice

White Minute Rice is a must. You will find that even using brown rice or other variety alters the result. You are welcome to play with the recipe but know if you change up the type of rice it might not turn out the proper creamy texture.

Quality Stock and Soup

Make sure to use quality stock or broth as that is going to be a stand-out flavor along with the condensed soup. Reach for a soup flavor you enjoy as well. Both of these ingredients will offer richness to the rice.

Parmesan Cheese

I do recommend not using powdered parmesan as it won’t create that cheesy texture the way grated will. You can buy grated tubs and containers in the refrigeration section at your grocery store. Or buy a block and fresh grate the cheese.

Serve Warm

This is a side dish that is going to taste best served fresh and warm. You can store the leftovers in the fridge but it will thicken up a bit and the texture of the rice changes a bit. So I do recommend serving fresh and warm instead of making ahead of time and reheating for later.

Frequently Asked Questions

What is Minute Rice, and can I use regular rice instead?

Minute Rice is a dehydrated rice that cooks in minutes and is similar to classic white rice. I find that using the Minute Rice is what makes this dish a stand-out flavor. It soaks in the ingredients as it cooks. If you try a different variety of rice know the end results can vary.

How do I prevent my Souper Rice from becoming too mushy?

Overcooking the rice is the main cause of it becoming mushy. The other tip I share is to make sure you don’t stir too harshly as it will break down the rice and cause it to become mushy as well.

Ingredients
  

  • 1 10.5 ounce can cream of chicken soup
  • 1 ½ cups chicken broth or stock
  • 1 ½ cups uncooked instant rice
  • ¼ cup shredded or grated parmesan cheese fresh or store bought is fine ● ¼ teaspoon black pepper

Instructions

  • In a large saucepan over medium heat, whisk together the cream of chicken soup and chicken broth. Stirring often until it begins to simmer.
  • Stir in the uncooked instant rice, parmesan cheese, and pepper. Cover the pan with a lid and remove from heat.
  • Let it sit covered for 5-8 minutes or until the rice is tender and the liquid has absorbed. 4. Serve hot and enjoy!
