What Are French Silk Brownies?
The word “French Silk” is referring to the chocolate pie, which is a very creamy and velvety texture that is chocolate flavored. You will find the texture of a French silk pie is very mousse-like.
So this recipe is a brownie base, and topped with an eggless French Silk pie topping, Cool Whip, and chocolate shavings. So it is like a pie and brownie in one sinfully delicious dessert.

Ingredients Needed
Brownie Mix – Reach for a brownie mix that is in a box as the base. You will use butter, egg and milk for whipping it up. Then you will bake the brownies as directed in the recipe card.
Cream Cheese – Make sure your cream cheese is room temperature and softened. That way it whips up to a very silky texture.
Vanilla – A splash of vanilla extract will enhance all the flavors in the French Silk pie mixture.
Powdered Sugar- If your powdered sugar is full of clumps, run through a sifter first. That way you get a velvety chocolate filling to spread on top of the brownies.
Chocolate – I used semi-sweet chocolate for this brownie recipe. If you are not a fan of semi-sweet reach for milk chocolate. You will also use chocolate for shaving on sprinkling on top of the bars.
Butter – Unsalted butter that is diced into cubes is needed. Make sure it is not margarine.
Whipped Topping – Whether you make homemade whipped cream or buy a tub of Cool Whip or Dream Whip. All will work for this recipe.
Variations to Recipe
Nuts
Sprinkle in some chopped nuts on top of the brownies with the chocolate shavings. Diced pecans, walnuts or even almonds would all be delicious.
Mint French Silk
Add a drop or two of mint extract to the French Silk filling to create a minty French Silk pie brownie. Then for the topping consider buying Andes mints and chop up and sprinkle them on top.
Caramel Sauce
Drizzle the top with some caramel sauce for a rich contrast that will enhance all the chocolate flavors in the layers. Salted caramel would be delicious as well.
These French Silk Brownies are perfect for any occasion – whether it’s a potluck, birthday party, or just a delicious indulgence for an after dinner dessert after a long day. Trust me, they won’t last long once you bring them out!
Cookies
Consider chopping up some cookies to sprinkle on top of the whipped cream or even the French silk layer. Oreo cookies, Milano cookies, shortbread cookies, and more would all be tasty.
Fruit
Raspberry or strawberry would both be great in this recipe. You could dice up fresh fruit and swirl it in the French Silk layer, so with each bite, you get that pop of fresh fruit. You could use frozen fruit, just make sure to thaw and drain it first.
White Chocolate
Use white chocolate instead of semi-sweet chocolate for a white chocolate silk pie brownie recipe. Just use the white chocolate where any chocolate is called for. It will totally transform the flavor of this dessert.
Bailey’s Irish Cream
Add 1/4 cup of Bailey’s Irish Cream to the French Silk Filling Mixture. You could also use a coffee liqueur of choice if you want. This will richen the dessert. But make sure at this point you serve only adults.
Coffee Beans
Chop up chocolate-coated coffee beans and sprinkle that on top of the brownies instead of chocolate shavings. It will give a nice crunch and caffeine boost as you eat your sliced dessert.
Pro Tips
Cool Brownies
It is important the brownies are completely cool. Otherwise, when you go to spread on the French Silk layer it is going to melt the mixture into the brownies.
Quality Chocolate
When you are making the French silk layer it is important to use a good chocolate for this portion. It is going to be the standout flavor and you want it to be nice and flavorful. If you reach for a cheaper chocolate you will taste a difference.
Picture yourself sinking your teeth into a fudgy, chocolatey brownie base, topped with a silky smooth, luscious French silk filling – it’s a match made in heaven! These brownies are a delightful combination of two beloved desserts, creating an indulgent treat that will leave you craving for more.
Softened Cream Cheese
Your cream cheese has to be softened otherwise it will not whip up and become smooth. It will end up leaving it a curdled texture like cottage cheese which will affect the whole dessert.
Whipped Cream
If you use whipped cream I do recommend it to be Cool Whip. It holds up the best and won’t break down near as fast compared to making homemade whipped cream.
Clean Slices
If you want that gorgeous clean slice warm your knife under warm water. Then dry the blade and make a slice. Wipe the blade clean and make another slice. Cleaning the knife between cuts will give you a really clean cut.
The brownies need to be stored in an airtight container in the fridge. These brownies will store for around 4-5 days in the fridge. You will eat them cold.
Storing
If you want you can also freeze any of the brownies you don’t think you will eat right away. Simply store in a sealed freezer container for 2-3 months. Then thaw in the fridge the night before for a slow thaw. Then enjoy.
