Ingredients You Will Need
Hawaiian Rolls – I love a Hawaiian roll as it is sweet and a bit of a savory all-in-one dinner roll.
Cheese – Provolone and Swiss are what I used for creating a layered amount of flavor to these sliders.
Sauce For Sandwiches – Ketchup and mayonnaise get mixed together for a creamy sauce that will complement all the ingredients used.
Pastrami – Head to your deli and get some pastrami deli meat for layering on these slider buns along with the cheese.
Topping – Butter, poppy seeds, and garlic powder are used to brush over the buns. It keeps the buns soft but also enhances the flavor tremendously.
Variations to Recipe
Buns – You can use any style of slider buns you would like. Butter, sweet rolls, etc. Or if you prefer to make homemade buns feel free to do that instead. Even pretzel rolls would be a tasty option.
Meat – Pastrami is what I used, but you could easily swap it with corned beef, roast beef, etc. Or if you want to do pastrami and other items like ham, salami, pepperoni, etc.
Cheese – Provolone, cheddar, Pepper Jack, and Monterey Jack cheese are all great options for adding flavor to the sliders.
Sauce – Opt for a different type of sauce like BBQ sauce, mayo and BBQ blend, mayo and Sriracha, etc. Feel free to pick and choose whatever flavors you want.
Tips for Success
Quality Of Rolls
Reach for fresh slider rolls for this recipe. You will want soft and tender rolls so that when they are topped and baked they hold shape and don’t become too dry.
Pastrami
The pastrami is the biggest flavor so make sure to reach for quality meat. You can get some shaved at the deli, or head to your favorite meat market to get some sliced. The thickness is up to you as well. I prefer thinner so I can pile it up on the rolls.
Condiments
As you can see you will spread the condiments on the bottom bun. Don’t do too much or it can sog up the buns as they bake in the oven.
Toasting Bun
The butter mixture you baste over the buns is a must. This is going to help keep the rolls from drying out and becoming hard as they bake in the oven.
Serve Warm
These sliders are best served straight from the oven. Slice and then plate them up and pair them with coleslaw, pickles, salty chips, or your favorite sides.
Storing Sliders
Assemble Before Serving
Go right ahead and make the sliders in advance if you want. Just assemble (not butter topping), cover, and store in the fridge. Then when you are ready to bake, preheat the oven, baste the top of the buns with the butter mixture, then bake. Add a few extra minutes to ensure it is warmed through.
Refrigerate
Refrigerate any of the pastrami sliders you do not eat right away. Just keep it in a covered dish for 3-4 days in the fridge. Then eat cold or warm them up.
Freezing
Now, go a step further and freeze the sliders you don’t want to eat right away. Reach for a freezer-friendly container and freeze the sandwiches for 2-3 months. Then thaw in the fridge overnight, and then eat chilled or warm it up. The buns can be softer in texture once thawed from being frozen.

Pastrami Sliders
Ingredients
- 16 oz package Hawaiian rolls
- 1 mayonnaise
- 1 ketchup
- 6 slices provolone cheese quartered
- 6 slices Swiss cheese quartered
- 1 lb pastrami deli meat
- 24 dill pickle slices round sandwich chip style
- 4 tablespoons unsalted butter melted
- 1 teaspoon poppy seeds
- ½ teaspoon garlic powder
- Cooking spray
Instructions
- Preheat oven to 350F degrees. Line a 9×13 or similar baking dish with foil and spray the bottom with cooking spray.
- Mix together the mayonnaise and ketchup and set aside.
- Pull rolls apart or slice your sheet of Hawaiian rolls in half lengthwise.
- Spread the mayo mixture onto the bottom of the rolls.
- Place two quartered provolone cheese slices onto each bottom roll.
- Next, divide the pastrami deli meat evenly between the sliders.
- Place two quartered Swiss cheese slices onto each slider, followed by two dill pickle slices on each slider.
- Place the top bun layer back onto the sliders.
- Mix together the melted butter, poppy seeds and garlic powder. Generously brush across the tops of the slider buns.
- Cover the baking dish with foil and bake in the oven for 15-20 minutes, or until the sliders are cooked through and the cheese is melted.
- Optional* place the cooked sliders under the broiler for 2-3 minutes to brown the top of the rolls.
- Serve immediately, enjoy!
