If you don’t have turkey, you can also use chicken instead. Either way, this is an incredible soup to try.

  • Turkey: Use cooked turkey for this recipe. You can shred or dice up for the star of this soup recipe.
  • Carrots: Fresh sliced carrots will add a nice sweetness to the soup.
  • Celery: Celery adds tons of flavor to the soup and will also add a pop of color.
  • Onion: White or yellow onion is best for the recipe.
  • Stock: Turkey or chicken stock can be used for the base of this recipe.
  • Turkey Gravy: The gravy thickens the soup and offers a gravy-like liquid base.
  • Seasonings: Poultry season, garlic powder, black pepper, and parsley are used for flavoring.
  • Rice: I used a box of Rice A Roni for this recipe. I just removed the seasoning.
  • Heavy Cream: Swirl in heavy cream for a creamy texture to the soup.

Variations and Substitutes

  • Swap the diced turkey with ground-cooked, diced, or ground chicken.
  • Add butternut squash, diced sweet potatoes, or other hearty vegetables.
  • You can swap the onion with leeks for a lighter flavor.
  • Use any spices or seasonings you like for this recipe.
  • Reach for chicken or brown gravy to replace turkey gravy.
  • This soup can be made with orzo, long-grain rice, or even brown rice. For a healthier twist, use quinoa.
  • Leave out the heavy cream to avoid making a creamy soup. You can also add some half-and-half to lighten up the soup.

What To Serve Soup With

This soup can be a great dish to pair with cornbread, biscuits, garlic bread, or even dinner rolls. I have even paired it with a slice of Amish bread with butter.

You can also go light and pair it with a crisp green salad or serve a grilled cheese or turkey sandwich on the side to make a heartier meal out of the soup.

Tips for Success

Do not add in the seasoning from the rice mixture, or it will alter the flavor. If you let the rice cook too long it will also break down and become soggy.

Do not add in the heavy cream until the end or it will curdle if it overcooks.

You can use low sodium broth if you want to reduce the salt in the soup recipe. Feel free to use whatever brand you would like.

You can make this soup ahead of time and keep in the fridge and then warm it up and enjoy over a few days.

Evenly chop up the vegetables so that every bite can get a bit of flavor. That way each bite you get a blend of all the ingredients in the soup.

Storing Leftovers

Refrigerate any of your soup you do not eat right away. Store in an airtight container in the fridge for 3-4 days. Then reheat as you would like.

Or you can put in freezer friendly containers and freeze for 2-3 months. When you are ready to eat, just defrost in microwave or thaw in the fridge overnight for a slow thaw.

Can I make this soup without cream?

Yes, you can make this rice turkey soup without the cream. Just leave it out or you can replace with a dairy free option if you do not want dairy in your soup.

How can I thicken the soup if I want a creamier consistency?

Adding more cream to the soup is going to help thicken it up. Or you can mix 2 tablespoons cornstarch and 1 tablespoon cold water. Stir well and then pour into the boiling soup mixture to help it thicken.

Can I double this recipe?

You are more than welcome to double this recipe if you would like. Just adjust the ingredients and reach for a larger pot to ensure it all fits in the pot.

Ingredients
  

  • 2-3 cups cooked turkey
  • 3 carrots sliced
  • 2 stalks celery sliced
  • 1 onion diced
  • 6 cups low sodium chicken or turkey stock
  • 1 envelope turkey gravy mix
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon black pepper
  • 1 4.3 ounce box long grain and wild rice a roni, discard the seasoning packet
  • 1 cup heavy cream
  • Parsley for garnish optional

Instructions

  • To your slow cooker add the cooked turkey, carrots, celery, onion, stock, turkey gravy mix, onion powder, garlic powder, poultry seasoning, and black pepper.
  • Cook on low for 6 hours or high for 4 hours.
  • 1 hour before serving add the rice to the slow cooker, stir and cover.
  • Right before serving stir in the cream.
  • Garnish with parsley and serve.
